How To Make This Peach and Corn Panzanella

Preheat the oven to 400°F/200 C. Line a baking pan with aluminum foil.

Clean the corn and brush it with oil, then place in pan. Roast it for 20 minutes. If more char flavor is desired, turn the oven to broil for the last 5 minutes.

Taste and adjust salt as desired (make it a little saltier than you think as it will cover a large amount of vegetables).

Assemble the salad:

Slice the tomatoes into 6 or 8 pieces depending on size. Slice peaches into 12 to 16 segments.

Dressing can be prepared up to 1 day in advance. Peaches and tomatoes can be sliced in advance but the peaches may brown. Croutons can be made up to 5 days in advance. Store in an air tight container at room temperature.

Important Recipe Notes

Bread: For best results use a crusty (non-sourdough) white bread or focaccia. Cubes should be about 1”/2.5cm in size. For a gluten free version, use gluten free bread.

Tomatoes: Cocktail tomatoes or heirloom tomatoes are perfect for this recipe. If unavailable, large cherry tomatoes cut in half will also work.

Corn – Raw vs Roasted: Raw corn can be used but is more difficult to digest. Roasting the corn adds more depth of flavor.
