Ingredients

  • 2 lbs/900g small red potatoes
  • 23 medium/150g dill pickles, sliced
  • 56 medium/100g radishes, sliced
  • 1 stalk/75g celery, chopped
  • Warm onion vinaigrette:
  • 1 medium/185g red onion, diced
  • 6 tbsp/90ml olive oil
  • 4 tbsp/60ml apple cider vinegar
  • 1 tbsp/15g coarse ground mustard
  • 1 tbsp/13g granulated sugar
  • 1 tsp/6g salt
  • 1/2 tsp/1g fresh ground black pepper

Instructions

  1. Slice the potatoes in 1/2”/12mm thick rounds or semi-circles (depending on size of potatoes). There is no need to peel.
  2. Bring a pot of water to a boil and cook potatoes until just tender but still holding their shape. Drain and allow to cool slightly. Cooking time varies, but will be about 15-20 minutes.
  3. Thinly slice pickles, radishes, and celery.

Make the dressing:

  1. Diced the onion and finely chop parsley.
  2. Add 4 tbsp/60ml olive oil, vinegar, mustard, sugar, salt, pepper, and parsley to a mixing glass or small bowl. Whisk to combine.
  3. Add 2 tbsp/30ml olive oil to a large frying pan on medium-high heat. Add the onion and cook, stirring occasionally until beginning to brown, 7-10 minutes.
  4. Remove from heat and add in the dressing. Stir to combine.
  5. In a large bowl, combine the potatoes, pickles, radishes, and celery. Pour over the warm dressing and toss to combine.
  6. Serve immediately for a warm salad. Can also be served cold.
  7. Stores for up to 2 days in the fridge.

Important Recipe Notes

Red potatoes are best for this recipe as they have the least starch and hold their shape when cooked. Other waxy varieties of potatoes including fingerling potatoes will work. Russet potatoes are not recommended.
