Sesame Miso Green Beans
These sesame miso green beans are savory, flavorful, and easy to make! A quick side dish with a delicious umami twist on a classic veggie.

Ingredients
- 1 lb/450g raw green beans, cleaned and trimmed
- 2 tbsp/30ml neutral oil (any high temperature oil)
- 3 cloves/15g garlic
- 3 tbsp/45ml soy sauce or tamari for gluten free
- 2 tbsp/30ml water
- 1 tbsp/15g white or yellow miso paste
- 1 tbsp/15ml toasted sesame oil
- 1 tbsp/15ml maple syrup
- 1 tbsp/8g toasted sesame seeds
Instructions
- Wash and trim the ends off the green beans. Dry as well as possible. This will help the beans stay crisp and bright during the initial frying.
- Mince or grate the garlic.
- In a small bowl, combine the garlic, soy sauce, water, miso, sesame oil, and maple syrup. Whisk until smooth.
- In a very large frying pan or wok, heat the neutral oil over medium-high heat.
- When very hot, add the green beans in as flat a layer as possible.
- Cook for 2 minutes, stirring occasionally to redistribute. Beans will get brighter green and charred in spots.
- Reduce heat to medium. Add in the sauce and stir to coat everything. Cook for 5 minutes, stirring regularly, until the beans are nearly cooked and the sauce is reduced.
- Add the toasted sesame seeds and cook for 1-2 more minutes until the beans are at desired cooked level and the sauce is thick.
- Serve immediately.
