How To Make These Apple Pie Overnight Oats
In a saucepan over medium heat, combine apples with 1 tbsp/30ml maple syrup and ½ tsp/1g cinnamon. If using crisper varieties of apples that do not soften/release as much juice when cooked, add a splash of water.

Cook for 5-7 minutes, stirring frequently until the apples are softened.
Set aside to cool slightly. Can be stored separately until ready to eat.
In a mixing glass or bowl, combine oat milk, 2 tbsp/30ml maple syrup, vanilla extract, 1/2 tsp/1g cinnamon, and salt. Whisk to blend.

Use 1 cup/240ml or larger jars or sealable containers. To each container, add ¼ cup/23g rolled oats and 1 tbsp/12g chia seeds.

Distribute the liquid evenly between containers. Stir well. Set aside for ten (10) minutes to thicken slightly. Stir once starting to thicken to redistribute the oats and seeds. Top with cooked apples.
Cover and set in the fridge for at least eight (8) hours or overnight. Store for up to four (4) days.
Important Recipe Notes

Adjust the water based on the type of apple you’re using. Crisper apples that do not release as much juice will need a splash of water.
Cook the apples until softened, about 5-7 minutes. The cooking time will vary based on your stove and variety of apple.
Use rolled oats that are certified gluten free. Many rolled oats are not gluten free because they come in contact with gluten when being processed.
