  • 1 lb/450g raw green beans, cleaned and trimmed
  • 2 tbsp/30ml neutral oil (any high temperature oil)
  • 3 cloves/15g garlic
  • 3 tbsp/45ml soy sauce or tamari for gluten free
  • 2 tbsp/30ml water
  • 1 tbsp/15g white or yellow miso paste
  • 1 tbsp/15ml toasted sesame oil
  • 1 tbsp/15ml maple syrup
  • 1 tbsp/8g toasted sesame seeds

Instructions

  1. Wash and trim the ends off the green beans. Dry as well as possible. This will help the beans stay crisp and bright during the initial frying.
  2. Mince or grate the garlic.
  3. In a small bowl, combine the garlic, soy sauce, water, miso, sesame oil, and maple syrup. Whisk until smooth.
  4. In a very large frying pan or wok, heat the neutral oil over medium-high heat.
  5. When very hot, add the green beans in as flat a layer as possible.
  6. Cook for 2 minutes, stirring occasionally to redistribute. Beans will get brighter green and charred in spots.
  7. Reduce heat to medium. Add in the sauce and stir to coat everything. Cook for 5 minutes, stirring regularly, until the beans are nearly cooked and the sauce is reduced.
  8. Add the toasted sesame seeds and cook for 1-2 more minutes until the beans are at desired cooked level and the sauce is thick.
  9. Serve immediately.

  • 1 lb/450g raw green beans, cleaned and trimmed – For best results use larger green beans. Thin, haricot vert style beans will cook too fast. If using thinner beans, reduce water to 1 tbsp/15ml. Beans may be slightly saltier.
